Basic Egg Salad
- ¼ cup sliced fresh chives
- ¼ cup chopped fresh parsley
- ½ of a small shallot minced
- ¼ cup mayo
- 1 lemon zested and juiced
- 2 tsp dijon
- 6 hard boiled eggs chopped
- Kosher salt and pepper to taste
- Mix everything together in a medium bowl. Season with salt and pepper to taste.
- Serve as a sandwich, with crackers or toast, or any way you desire 🙂
