
Summery Quinoa Salad
Serves 4-6

Ingredients
- 3-4 nectarines diced small (depending how fruity you want it lol)
- 2 small seedless cucumbers diced small
- 1 jalapeño finely chopped (seeds removed if desired)
- ¼ of a large red onion minced and rinsed in cold water
- 1 ear fresh corn shucked and kernels removed from the ear
- ¼ cup chopped fresh mint plus more for serving if desired
- ¼ cup chopped fresh dill
- ¼ cup chopped shelled roasted pistachios
- 4 oz feta cheese diced small
- 1 ½ cups cooked quinoa
- 3 Tbsp fresh lemon juice
- ¼ cup extra virgin olive oil
- Kosher salt and black pepper to taste
Instructions
- Add everything to a large bowl and toss gently. Taste the salad and add more lemon, olive oil, salt and or pepper if desired. Thats it! So fresh so yum!
