Verdita Margarita
Makes enough Verdita for about 8-10 margaritas
Ingredients
Verdita
- 1 very ripe pineapple peeled, cored and roughly chopped
- 3 mini cucumbers roughly chopped
- 1 large bunch of fresh mint stems removed
- 1 bunch of cilantro roughly chopped (stems and all)
- 1 jalapeño roughly chopped
Margarita
- Kosher salt to rim the glass
- Ice
- 3 oz verdita
- 2 oz blanco tequila
- 1 oz fresh lime juice plus more for the rim of the glass
- 1 oz triple sec
- Lime wheels for garnish
- Fresh mint sprigs for garnish
Instructions
- To make the verdita: Blend pineapple, cucumbers, mint, cilantro, and jalapeño until very smooth. Strain through a fine mesh sieve (lined with cheesecloth if you have it). Alternatively, if you have a juicer, juice everything for the verdita, and skip the straining step!
- To make the margarita: Coat the rim of a glass with lime juice and then dip in salt. Set aside.
- Add a bunch of ice to a cocktail shaker. Add in the verdita, tequila, lime juice, and triple sec. Shake until the outside of the shaker is very cold, almost too cold to handle.
- Add a bunch of ice to the prepared glass. Pour the drink over the prepared glass and garnish with a lime wheel and a sprig of mint.
