diced small, rinsed under cold water

large heirloom tomato

large english cucumber

large green pepper

chopped kalamata olives

chopped fresh mint

finely chopped parsley

feta
diced small

extra virgin olive oil
plus more for serving if desired

red wine vinegar
depending on how vinegary you’d like it!

oregano
Kosher salt and pepper to taste
Instructions
Add everything to a large bowl and toss until combined. Taste and add more olive oil, vinegar, salt and or pepper, if needed.
Serve topped with more olive oil and fresh black pepper.
