Ingredients

chopped fresh parsley

of a small shallot
minced

mayo

zested and juiced

dijon

hard boiled eggs
chopped
Kosher salt and pepper
to taste
Instructions
Mix everything together in a medium bowl. Season with salt and pepper to taste.
Serve as a sandwich, with crackers or toast, or any way you desire :)
