3-4nectarinesdiced small (depending how fruity you want it lol)
2small seedless cucumbersdiced small
1jalapeñofinely chopped (seeds removed if desired)
¼of a large red onionminced and rinsed in cold water
1ear fresh cornshucked and kernels removed from the ear
¼cupchopped fresh mintplus more for serving if desired
¼cupchopped fresh dill
¼cupchopped shelled roasted pistachios
4ozfeta cheesediced small
1 ½cupscooked quinoa
3Tbspfresh lemon juice
¼cupextra virgin olive oil
Kosher salt and black pepper to taste
Instructions
Add everything to a large bowl and toss gently. Taste the salad and add more lemon, olive oil, salt and or pepper if desired. Thats it! So fresh so yum!
