2white Belgian endive
1ripe pear of choicethinly sliced

Instructions
Cut off the bottom core of both endive and separate the leaves. Arrange leaves in a flat manner on a large plate or platter.
Arrange sliced pears all over.
Add as much crumbled blue cheese and maple walnuts as desired over the whole salad.
Dress the salad simply by juicing fresh lemon all over and drizzling with olive oil.
Season evenly all over with flake salt and pepper. The idea is not to toss the salad and instead evenly dress the entire platter.
Garnish with fresh dill all over. Yum!

Maple Walnuts
½ cup whole walnuts
2 Tbsp maple
Salt, to taste
chili, to taste
Add walnuts and maple to a small pan over medium-low heat. Sprinkle them with salt and chili to taste.
Cook, stirring, until the maple syrup has reduced, browns slightly, and coats the walnuts, about 3-5 minutes.
Transfer the mixture to a lined sheet tray and let cool completely. They will be nice and crunchy once fully cooled. You can even toss them into the freezer for quick cooling!
