
Brown Butter Chocolate Chip Skillet Cookie
Makes 4-6 servings

- 10“ cast iron pan or any 10 inch oven safe skillet)
- Medium bowl

Ingredients
- 1 stick unsalted butter
- ½ cup brown sugar
- ⅓ cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- ¾ cup all purpose flour
- ¼ cup oat flour
- ½ tsp salt
- ¼ tsp baking soda
- ¼ tsp baking powder
- 1 cup chocolate chips or chopped chocolate
- Flaky salt
- Vanilla ice cream for serving
Instructions
- Preheat oven to 375ºF.
- In a 10 inch cast iron (or any 10 inch oven safe skillet), melt butter and continue cooking, stirring constantly, until browned.
- Pour butter into a medium bowl and add in both sugars. Stir to combine.
- Add in egg and vanilla. Whisk until the mixture comes together and lightens in color slightly, about 2 minutes.
- Add in flour, oat flour, salt, baking soda, and baking powder. Mix until combined.
- Fold in chocolate chips, reserving a few for the top.
- Add dough into the same pan you browned the butter in. Top with reserved chocolate and a sprinkle of flaky salt.
- Bake until golden, about 20- 25 minutes.
- Let cool slightly in the pan and serve warm with ice cream.
Notes
**Oat flour can be made by blending old fashioned or quick cook oats in a blender until powdery.
***If you only have a 12 inch skillet you can double the recipe and increase the bake time 🙂

I’ve made this about five times so far (in my 10 inch cast iron) and every time it turns out amazing. Be advised that browning the butter is non-negotiable! Cannot recommend this recipe enough!
